These apple oat pancakes offer a soft, tender texture with a naturally sweet and gently spiced flavour profile.
Made from finely ground gluten-free oats, they provide a light yet satisfying base, while chia seeds help bind the batter and support structure. The addition of blended apple brings natural sweetness, moisture and a subtle freshness, reducing the need for added sweeteners.
Vanilla and cinnamon add warmth and depth, creating a familiar, comforting flavour that works perfectly for a relaxed breakfast or a lighter sweet option.
Cooked gently until golden, the pancakes develop a soft interior with lightly crisp edges. They are best enjoyed warm, when their texture is at its most delicate and inviting.
- 100 g gluten-free rolled oats
- ½ tbsp chia seeds (approx. 5 g)
- 1 tsp baking powder
- 1 tsp Eiravee Sweet Blend (optional)
- 120 ml plant milk
- 1 medium apple (peeled and cored)
- 1 tsp vanilla paste
- ½ tsp ground cinnamon
Prepare the oat flour
Grind the oats, chia seeds, baking powder and sweetener (if using) into a fine flour using a coffee grinder or high-speed blender.
Transfer to a bowl.
Prepare the apple mixture
Blend the peeled and cored apple with the plant milk until smooth and fully combined.
Make the batter
Pour the apple mixture over the dry ingredients and mix thoroughly until a smooth, uniform batter forms.
Cook the pancakes
Lightly grease a frying pan with oil and heat over medium heat.
Spoon portions of the batter into the pan and cook until bubbles form on the surface and the edges begin to set. Flip and cook the other side until golden.
The batter will be slightly thicker than traditional pancake batter — this is expected.
Cook over medium heat to allow the pancakes to set properly without browning too quickly.
These pancakes are best enjoyed fresh and warm.
Serving suggestion
Serve the pancakes warm, topped with fresh cherries for a bright, slightly tart contrast to their soft, naturally sweet flavour.
A spoonful of plant-based yoghurt adds a gentle creaminess, while an extra light dusting of cinnamon can enhance the warm, comforting notes.
