Soft, vegan, gluten-free oat waffles with banana — a simple, naturally sweet, plant-based option for a comforting breakfast.

These vegan waffles offer a soft, tender texture with a naturally sweet flavour, made from simple, wholesome ingredients.

The base is created from finely ground oats, combined with chia seeds to help bind the mixture and provide structure. Banana adds natural sweetness and moisture, resulting in a soft interior without the need for added sugar.

Coconut flour or Eiravee Fibre Blend helps balance the texture, creating a batter that holds together well while remaining light and satisfying.

Once cooked, the waffles develop a soft centre with lightly crisp edges, making them ideal for a variety of toppings — from fresh fruit to plant-based yoghurt or nut butter.

About the ingredients used in this recipe

Oat Flour

When a recipe calls for oat flour, we simply make it at home by grinding gluten-free oats. This can easily be done in a coffee grinder or a high-speed blender such as a Nutribullet. Freshly ground oat flour works very well in baking and allows you to control the texture depending on how finely the oats are milled.

Plant Milk

In most recipes we use plant-based milk, usually Plenish coconut milk or homemade coconut milk. These options contain very simple ingredients and are free from unnecessary additives or thickeners.

Using a clean, minimally processed plant milk helps keep the flavour natural and works well in both sweet and savoury baking.

Other unsweetened plant milks can also be used, but choosing versions without added sugars or stabilisers usually gives the best results in baking.

Chia Seeds

Chia seeds are a versatile ingredient often used in plant-based baking to help bind and stabilise mixtures.

When combined with liquid, they absorb moisture and form a gel-like texture, which can support structure in recipes without the need for eggs. This makes them particularly useful in vegan baking.

In addition to their functional role, chia seeds add a subtle texture without affecting the overall flavour of the dish.

Eiravee Fibre Blend

A fibre-based flour alternative, developed in-house to improve texture and structure in gluten-free baking. The recipe for the Eiravee Fibre Blend can be found on the website and in this book.

Banana

Banana adds natural sweetness, moisture and softness to baked goods, making it a valuable ingredient in plant-based recipes.

In recipes such as vegan waffles and pancakes, it acts as a natural sweetener while also helping to bind the mixture and improve texture. This allows for a reduced need for added sweeteners.

When used ripe, banana provides a deeper sweetness and a smoother consistency, making it ideal for blending into batters.

Ingredients

• 100 g gluten-free rolled oats

• 1 tbsp chia seeds

• 1 tbsp coconut flour (or Eiravee Fibre Blend)

• 1 banana

• 130–140 ml plant milk or water

• 1 tsp baking powder

• a pinch of salt

• vanilla

• 1 tsp cocoa powder (optional)

Instructions

Prepare the dry base

Place the oats, chia seeds, coconut flour (or fibre blend), baking powder and salt into a blender or grinder and process into a fine flour.

Transfer to a bowl.

Blend the wet ingredients

Blend the banana with the plant milk (and dates, if using) until smooth.

Make the batter

Pour the banana mixture into the dry ingredients and mix thoroughly until combined.

The batter will be thick rather than pourable.

Cook

Preheat the waffle maker.

Spoon the batter into the waffle iron and spread gently if needed.

Cook for approximately 8 minutes in a non-stick waffle maker, or 12 minutes in a ceramic waffle maker, until set and lightly golden.

Notes

The batter should be thick — this is normal and helps create the final texture.

Cooking time may vary depending on the waffle maker.

The waffles can also be made with apple instead of banana — in this case, reduce the liquid slightly and allow for a longer cooking time.

Best served warm.
