The Eiravee Sweet Blend is a two-ingredient sweetener developed to offer a smooth, well-rounded sweetness while remaining easy to use across a wide range of recipes.
By combining erythritol and stevia in a fixed ratio, the blend delivers a sweetness level approximately four times higher than sugar. This means smaller quantities are needed to achieve the desired level of sweetness, helping to create more balanced recipes.
Blending erythritol with stevia also allows for a reduced overall use of sugar alcohols compared to using erythritol on its own, while maintaining a pleasant, clean taste.
It works particularly well in baking, where it integrates evenly into batters and doughs, and can also be ground into a fine powder for smoother textures in creams, fillings or chocolate-based recipes.
When used appropriately, it can fit well within a range of dietary approaches, including vegan, paleo-style and low-carbohydrate lifestyles.
Designed for consistency and versatility, it can be used throughout this book as a sugar alternative in adjusted quantities.
About the ingredients used in this recipe
Erythritol
Erythritol is a sugar alcohol commonly used as a sugar alternative in baking. It provides a clean sweetness and works well in a wide range of recipes.
On its own, larger amounts may be needed to achieve the desired level of sweetness. For this reason, it is often combined with other sweeteners to create a more balanced result.
In our recipes, erythritol is used as part of a blend, allowing for a reduced overall quantity of sugar alcohol while maintaining a pleasant taste and texture.
Stevia
Stevia is a natural, plant-derived sweetener known for its high sweetness intensity. A very small amount is enough to achieve the desired level of sweetness.
We use a high-purity Reb-A 98% stevia powder, which provides a cleaner taste and more consistent results in baking.
When combined with erythritol, stevia enhances the overall sweetness of the blend. This allows for significantly smaller quantities of erythritol to be used, helping to create a more balanced and refined sweetness.
• 1000 g Natural Erythritol - I used this
• 20 g REB-A > 98% Pure Stevia Powder - I used this
My recommended ingredients are available on [here].
Pour half of the erythritol into a larger, perfectly sealable jar.
Add the stevia powder carefully (take care, as finely ground stevia can easily become airborne). Then add the remaining erythritol on top.
Place the lid back on the jar and screw it on tightly. Make sure the lid is securely fastened and cannot come loose, then shake the two sweeteners together for 4–5 minutes. Store in a cool, dry place.
If you would like to label your jar, you can download the matching Eiravee label from here:
Print it onto label paper if you have it, or simply use regular paper and secure it neatly to the jar with clear tape.
Due to its higher sweetness intensity, adjust quantities carefully when replacing sugar.
Individual tolerance to sweeteners may vary.
