A soft coconut sponge coated in a rich chocolate glaze and finished with desiccated coconut — a lighter, gluten-free take on a classic favourite.

These paleo coconut squares offer a soft, tender sponge with a rich chocolate coating and a delicate coconut finish.

The sponge is made with coconut flour and ground almonds, creating a light yet satisfying texture. Eggs provide structure, while olive oil and plant milk add moisture, resulting in a soft, slightly springy crumb.

The chocolate coating is smooth and gently sweetened, with a hint of cocoa and subtle richness from the added fat. Once dipped and rolled in desiccated coconut, the squares develop their signature texture — soft inside, lightly coated on the outside.

This version is naturally gluten-free and dairy-free, offering a more balanced alternative to the traditional recipe while keeping its familiar flavour and comforting appeal.

Ingredients

For the sponge

• 2 medium eggs

• 60 ml plant milk

• 2 tbsp olive oil

• 30 g coconut flour

• 40 g ground almonds

• 1 tbsp Eiravee Sweet Blend

• 1 tsp baking powder

• A pinch of salt

• 1 tsp vanilla paste

For the chocolate coating

• 40 ml water

• 1 tbsp cocoa powder

• 1 heaped tbsp Eiravee Sweet Blend

• 25 g plant-based butter (or coconut oil)

• A pinch of salt

• 4 tbsp desiccated coconut (approx. 20–22 g), for coating

Instructions

Prepare the sponge

Whisk the eggs until light and slightly fluffy.

Add the plant milk and olive oil, then mix to combine. Stir in the dry ingredients and mix until smooth.

Transfer the batter into a 17 × 12 cm microwave-safe dish and smooth the surface evenly.

Cook in a microwave on high for approximately 5 minutes, until set.

Turn out onto a rack and allow to cool completely.

Prepare the chocolate coating

In a saucepan, heat the water, sweetener and salt until dissolved.

Remove from the heat and whisk in the cocoa powder until smooth, then return briefly to the heat.

Take off the heat again and stir in the fat until fully incorporated. Add rum flavouring if using.

Finish

Cut the cooled sponge into 8 pieces.

Dip each piece into the chocolate coating, then roll in desiccated coconut.

Notes

Ensure the sponge is fully cooled before dipping, as this helps maintain its structure.

The chocolate coating should be smooth and fluid — if it thickens, warm it gently before use.

The sponge can be cut into smaller pieces for bite-sized portions.

Store in a cool place or refrigerate, and allow to come to room temperature before serving.
